Fresco Cocina

Fresco Cocina is a Latin inspired restaurant with a playfully curated menu, drawing on dishes from Venezuela Peru, Brazil, and Uruguay. The owner of Fresco Cocina grew up in Venezuela and wants to share the latin cuisine she enjoyed in her childhood.

Chef Idso (Pacifica Del Mar, Water Grill, Estancia), introduces Carlsbad to pabellón criollo, the national dish of Venezuela, which includes braised short ribs paired with black beans, rice, and fried sweet plantains. There’s also a popular, traditional Peruvian dish, a stir fry that typically combines marinated strips of sirloin with onions, tomatoes, french fries, and other ingredients; and is typically served with rice.  Brazilian churrasco which is the national barbecue of Brazil, where spit-roasting has been raised to the level of art.  In addition to an Uruguayan specialty called a chivito, a multi-meat and cheese sandwich often topped with a fried egg.
