
In 1882, Captain John Frazier, one of Carlsbad’s early pioneers, drilled a well on his property while searching for fresh water. Instead, he discovered something extraordinary—an artesian mineral spring.
After drinking the water, Captain Frazier noticed relief from a chronic stomach ailment. Curious about its unique properties, he sent samples to laboratories in New York and Chicago for analysis. The results showed that the mineral composition of the water was remarkably similar to the famous healing waters of Karlsbad, Bohemia—today known as Karlovy Vary in the Czech Republic. The water is naturally alkaline, typically measuring between pH 8.0 and 9.0, and contains naturally occurring minerals and electrolytes.
Today, the water is drawn from a 1,700-foot-deep aquifer, and according to Alt Karlsbad, the source is estimated to be approximately 9,500 years old.
For generations, many people have believed Carlsbad’s mineral water offered therapeutic benefits, particularly for digestion and general wellness. Today, many visitors still enjoy drinking the water as part of a healthy lifestyle, continuing a tradition that began more than 140 years ago.
Recognizing its potential, Captain Frazier began sharing the water with travelers stopping at the nearby railroad station. Word spread quickly, and visitors soon came specifically to experience what many believed were the healing properties of Carlsbad’s famous mineral water.
As interest grew, the town was renamed Carlsbad after the famous European spa city. A grand hotel and spa were built near the mineral well, transforming Carlsbad into one of Southern California’s earliest health resort destinations. During the early 1900s, visitors traveled from across the country to drink the mineral water and enjoy spa treatments. Hollywood celebrities and other notable guests later visited the resort, helping establish Carlsbad as a fashionable coastal retreat.
In 1955 and again in 1973, the California State Senate officially recognized the historic mineral well, declaring it a California Historical Landmark and praising it as producing California’s “Most Healthful Water” in its commemorative resolutions.
Unfortunately, during the Great Depression, maintaining mineral wells became too expensive. The wells fell into disrepair, the original mineral water operation eventually closed, and the historic hotel was later destroyed by fire. The famous spring remained dormant for nearly 60 years.
The story didn’t end there.
In the early 1990s, Ludvik Grigoras, a native of Karlovy Vary, became passionate about restoring this important piece of Carlsbad’s history. He helped establish the Sister City relationship between Carlsbad and Karlovy Vary while leading the restoration and re-drilling of the original artesian well. He also built Alt Karlsbad, a European-inspired building celebrating the connection between the two cities.
Today, visitors can still experience this remarkable piece of Carlsbad’s history at Alt Karlsbad, located at 2802 Carlsbad Boulevard. Guests can sample the famous alkaline mineral water, enjoy therapeutic mineral baths and massages, or fill reusable containers at the outdoor self-service water station. The water is also bottled directly at the source—without ionization or added chemicals—and is available at several local grocery stores.
Over 140 years after Captain John Frazier’s remarkable discovery, Carlsbad’s mineral water continues to connect visitors with the story that gave our city its name.

The Carlsbad Railroad Depot: The Station That Helped Build a City

As we stand here, you’re looking at one of Carlsbad’s oldest surviving landmarks. Built in 1887, this beautiful Victorian-style railroad depot is one of the few remaining pre-1900 train stations still standing in California.
The arrival of the railroad changed everything for Carlsbad. It brought visitors, connected local farmers to markets across the country, and helped transform a small coastal settlement into a thriving community.
One interesting chapter in the depot’s history came in the early 1900s. Because there was another Carlsbad in New Mexico, railroad officials decided to shorten the station’s name to simply “Carl” to reduce confusion.
The residents of Carlsbad were not happy.
They believed the city’s name represented its unique history and identity, and after protesting the change, they eventually convinced the railroad to restore the name Carlsbad. It’s a wonderful reminder that even then, the people here took great pride in their community.
Around this same time, another important resource helped shape Carlsbad’s future—water.
With the development of reliable irrigation systems and imported water supplies, agriculture flourished throughout the region. Carlsbad became known for producing avocados, citrus, strawberries, vegetables, and some of the most beautiful flowers in California.
For many years, Carlsbad proudly called itself the Avocado Capital of the World and celebrated its agricultural heritage with the annual Carlsbad Avocado Festival. Today, while avocados remain part of our history, Carlsbad is perhaps best known for the spectacular Carlsbad Flower Fields, where nearly 55 acres of Giant Tecolote Ranunculus bloom into brilliant color every spring.
Agriculture eventually gave way to another industry that helped put Carlsbad on the world map—golf.
Today, Carlsbad is often called the Golf Capital of the World, home to many of the biggest names in the golf industry, including Callaway Golf, TaylorMade, Titleist, and COBRA PUMA Golf. Combined with championship golf courses like Omni La Costa Resort & Spa and The Crossings at Carlsbad, the city has become an international destination for golfers.
So think about it…
Carlsbad has been known as the Mineral Water Spa City, the Avocado Capital, the Flower Capital, and the Golf Capital.
Maybe one day we’ll also be known as the Food Tour Capital of California!
The railroad depot continued serving passengers until 1960. Today, this beautifully restored building serves as the Carlsbad Visitor Center, where visitors from around the world begin exploring everything our wonderful coastal village has to offer.

As we walk down Carlsbad Boulevard, you’re looking at one of the city’s most recognizable historic buildings, the Twin Inns, originally built in 1887.
The home was commissioned by Gerhard Schutte, one of Carlsbad’s founding visionaries and often referred to as the “Father of Carlsbad.” Schutte was one of the investors behind the Carlsbad Land and Mineral Water Company, formed after Captain John Frazier’s discovery of the famous alkaline mineral spring.
Schutte and his partners dreamed of creating “a town of small farms and gracious homes.” They purchased more than 400 acres of prime coastal land, laid out the original townsite, planted rows of eucalyptus trees along the streets, and helped shape Carlsbad Village we know today.
Just a few hundred feet north stood an identical Victorian home built by Schutte’s business partner, Samuel Wadsworth. Together, the two grand homes became known as the Twin Inns, serving as prominent landmarks that could be seen for miles across the coastal plain.
Over the years, the property changed hands several times before being purchased in 1914 by Ed and Neva Kentner. The Kentner family transformed it into a restaurant that became famous throughout Southern California for its family-style fried chicken dinners and its iconic plaster chickens displayed outside.

The Roaring Twenties and Prohibition
The Twin Inns became even more popular during Prohibition, when the 18th Amendment banned the manufacture and sale of alcohol in the United States.
While many businesses struggled, Carlsbad found itself in a unique position.
Hollywood celebrities and wealthy travelers frequently made the trip from Los Angeles to Agua Caliente in Tijuana, where gambling, entertainment, and alcohol remained perfectly legal.
Located almost exactly halfway between Los Angeles and Tijuana, the Twin Inns became a favorite stopping place for travelers making the journey south. Its famous chicken dinners earned a loyal following, and over the years, stories of bootleggers and rumrunners passing through the area became part of local folklore.
One local legend tells of a discreet call button behind the building that signaled deliveries during Prohibition. While it’s difficult to verify every detail, stories like these have become part of the colorful history that makes Carlsbad so fascinating.

A Hidden Speakeasy
Today, behind this historic building is a modern speakeasy-style bar that embraces Carlsbad’s Prohibition-era history.
Finding the entrance is part of the fun. Guests receive a changing access code through social media before entering, creating a playful nod to the secret bars of the 1920s.
It may not be an original Prohibition speakeasy, but it certainly captures the mystery and excitement of the era.

Ghost Stories and Local Legends
Of course, no Victorian building would be complete without a good ghost story.
Over the years, the Twin Inns has developed a reputation as one of Carlsbad’s most haunted buildings. Whether you believe in ghosts or not, the stories have become part of their charm.
Adding to the fun, every October the owners place a mannequin in one of the upstairs windows and quietly move it to a different location each day. Visitors often swear they’ve seen someone watching from the window, only to discover it’s all part of a playful Halloween tradition.
It keeps locals talking—and gives visitors one more reason to look up as they walk by.

During the 1920s through the 1950s, this quiet coastal village offered something that celebrities couldn’t always find in Los Angeles, peace, privacy, fresh ocean air, and a slower pace of life.
Carlsbad became a favorite stop along historic Highway 101, the scenic coastal route connecting Los Angeles with San Diego and, during Prohibition, the famous entertainment district of Agua Caliente in Tijuana.

One of my favorite things about sharing Carlsbad’s history is helping guests realize that they’re walking the same streets once traveled by Hollywood legends, ranchers, artists, surfers, and entrepreneurs.

Hollywood’s Favorite Coastal Drive
Before Interstate 5 existed, everyone traveled along Highway 101.
Imagine driving south from Hollywood in a classic Packard or Cadillac. The drive hugged the Pacific Ocean, winding through beach towns before arriving in Carlsbad.
The journey itself became part of the experience.
Many travelers stopped here to stretch their legs, enjoy a wonderful meal, and take in the spectacular ocean views before continuing south.
Carlsbad wasn’t just another stop.
It became a destination.
More About The Twin Inns: A Celebrity Favorite
One of the most popular places to stop was the Twin Inns.
Originally built in 1887, the Victorian landmark became famous for its warm hospitality and legendary family-style chicken dinners.
Throughout the 1930s, 40s, and 50s, it developed a reputation as one of Southern California’s favorite roadside restaurants.
Perhaps its most famous guest was John Wayne.
The Duke was known to dine here, and today the beautifully restored Duke Room at the Land & Water Company is named in his honor.
Standing here today, it’s easy to imagine John Wayne walking through these doors after a day along the coast.
Bing Crosby and the Golden Age of Del Mar
One reason so many celebrities traveled this route was Bing Crosby.
Crosby helped open the Del Mar Racetrack in 1937, turning the area into one of Southern California’s premier social destinations.
Horse racing attracted actors, musicians, athletes, and business leaders from across the country.
Many of those visitors traveled through Carlsbad, stopping for meals, overnight stays, or simply to enjoy the coastal scenery.
The glamour of Del Mar helped shine a spotlight on the entire North County coastline.

Just a few miles from here was the ranch of actor Leo Carrillo.
Many of you probably know him as Pancho from The Cisco Kid.
When he wasn’t filming movies in Hollywood, he escaped here.
He raised cattle.
Worked the land.
Enjoyed the quiet life.
Today his ranch is one of Carlsbad’s most beautiful historic parks.
Another reason celebrities came through this area was because of Bing Crosby.
He helped open the Del Mar Racetrack in 1937.
Suddenly, movie stars from all over Hollywood were traveling south to spend weekends at the races.
Carlsbad was perfectly located along the journey.
And then came…
Prohibition.
Imagine it’s 1928.
Alcohol is illegal throughout the United States.
But just a couple hours south…
Tijuana is booming.
Casinos.
Nightclubs.
Fine dining.
Cocktails.
Hollywood celebrities made the trip all the time.
Carlsbad sat almost exactly halfway.
The Twin Inns became one of the favorite stopping places.
Local legends even tell stories of bootleggers quietly making deliveries behind the building.

The stories have become part of Carlsbad’s charm.

Another Hollywood legend who left a lasting mark on Carlsbad was Leo Carrillo.
Known to millions as “Pancho” on The Cisco Kid, Carrillo purchased more than 2,500 acres here during the 1930s.

Today, Leo Carrillo Ranch Historic Park remains one of Carlsbad’s most treasured historic sites.
Complete with adobe buildings, lush gardens, and free-roaming peacocks, it offers a glimpse into the quieter life Carrillo cherished.
As we look across the street, you’ll notice the large mural on the side of the building that features Porky the Surfing Pig.
Now, you’re probably wondering…
“What does a surfing pig have to do with Carlsbad?”
That’s exactly what I asked when I first heard the story!
Back in the days when the Twin Inns were famous for its family-style chicken dinners, the property was also home to a small farm. Along with the chickens, there was one very adventurous pig named Ralph Nader.
According to local legend, Ralph had a habit of escaping his pen and wandering across the street to what the liquor store is now. He became such a familiar sight that locals began referring to the store as “Pig Liquor.”
The nickname stuck.
For many years, pig statues stood outside the store, and if you stop today, longtime employees and locals are often happy to share the story behind the famous pig.
Whether every detail has grown with time or not, it’s become one of those fun Carlsbad stories that locals love passing down from generation to generation.
So yes…between the famous chicken dinners at the Twin Inns and Ralph the wandering pig across the street, this corner of Carlsbad once felt a lot more like a farm than the bustling beach village we know today!
The original sign hung in the 1930’s then it disappeared. This sign is a replica of the original. A couple of years ago a local real estate broker Carlton Lund saw the Encinitas sign and said to himself that Carlsbad needs a sign like this one, so he then made it his mission to get the sign. He got Taylor made to pay for it. Then he had Wyland (the famous whaling wall artist design a dolphin character as the sign logo (Darlene the Dolphin, named after his mother), but the townspeople did not want their town represented by a dolphin so they voted it out, then he came up with the idea to use the original design from the 1930’s and so that is what we have today.

Although it’s not the official flower of Carlsbad, many locals think of it as the city’s unofficial signature flower because it grows so beautifully in our mild coastal climate. Its bright orange and blue blooms resemble the head of an exotic tropical bird ready to take flight.

Carlsbad unique trees – Mexican Coral, Indian Bayon, Silk tree, Pepper Trees, Eucalyptus Trees
Pink Floss-Silk Tree
With their fat, thorny trunks and branches, tropical-looking foliage, and exotic, hibiscus-like flowers, the floss-silk trees are among the most distinctive ornamental trees for regions where frosts are not severe. Closely related to the tropical kapok tree. Like the kapok tree, floss-silk trees have palmate leaves with five-inch-long leaflets and are known for their large seed pods, which contain copious amounts of a cottony fiber that was use as stuffing in pillows and as insulation in parkas and other cold-weather clothing. Successful in dry climates of Southern California.
Eucalyptus Trees
Originally, brought over from Australia to use the wood for railroad ties, bridges, and trestles. However, they soon discovered that immature blue gum wood was not suitable for their purposes. The wood was too hard to drive railroad spikes into, and the wood tended to twist and warp as it dried and broke easily. Giant eucalypts have a habit of dropping heavy branches earning them the nickname of Widow Maker.
Mexican Coral Tree
Spectacular flowering trees with bright red-orange tubular blooms. The seeds are found to be poisonous.
Indian Banyan
Indian banyan or banyan fig, unusually shaped tree of the mulberry family (Moraceae) native to the Indian subcontinent. The banyan reaches a height up to (one hundred feet) and spreads laterally indefinitely. The banyan is the national tree of India.
California pepper tree
Crushed leaves from the pepper tree release a distinct aroma close to that of commercial black pepper.
Catnap Mural is a pair of colorful tigers has appeared on the wall of the Witch Creek Winery at the corner of Carlsbad Boulevard and Grand Avenue.
The work, called “Catnap,” is one of four murals painted in downtown Carlsbad. The New Village Arts organization is sponsoring the project. They believed that “When you have art in usual places it makes the town more interesting, so as we are walking around today try to see if you can find any more street murals.
The artist of this piece of work is Michael Summers from Oceanside. “Change is the essence of life. Be willing to surrender what you are for what you may become.” Y you can become a rainbow tiger, or a tiger can change his strips whichever you would like, but obviously this guy has an attitude problem, he does not want to change, and this guy goes with the flow.
This is another historical building from the early 1900’s: Killian Building, the first Commercial venture in Carlsbad. It housed a grocery store, Doc Office, and the town newspaper.
Carlsbad artist Bryan Snyder curated the Carlsbad Alley Art Wall in 2022. This public art wall consists of seventeen murals by different muralists. Furthermore, there is a large Recreation Mural Space where aspiring kid muralists can practice their painting. Thus, it is an ever-changing space, so stop by to see what has been created, or to watch the live action

California’s wine story is one of innovation, perseverance, and a little bit of friendly competition.
Today, California produces about 80–85% of all the wine made in the United States, making it by far America’s leading wine-producing state. If California were its own country, it would consistently rank among the top five wine-producing regions in the world, alongside countries like Italy, France, and Spain.
But it wasn’t always that way.
One of the most important moments in California wine history happened in 1976 during an event known as the Judgment of Paris. In a blind tasting competition, French wine experts compared California wines against some of France’s most prestigious Bordeaux and Burgundy wines.
To everyone’s surprise, California wines won both the red and white wine categories, shocking the wine world and forever changing the reputation of American wine. Overnight, California emerged as one of the world’s premier wine regions.
If you’ve never seen it, this remarkable story is beautifully told in the movie Bottle Shock, which is based on the true events of the 1976 competition.
Another film that had a huge impact on the wine industry was Sideways, released in 2004. The movie famously celebrated Pinot Noir while poking fun at Merlot. After its release, Pinot Noir sales soared across the country, while Merlot sales declined—a phenomenon that many wineries still talk about today. It remains one of the best examples of how popular culture can influence what people drink.
California’s wine industry continues to evolve. Today there are more than 4,000 wineries throughout the state, producing hundreds of grape varieties in over 140 American Viticultural Areas (AVAs). While Napa Valley and Sonoma are the most famous, outstanding wines are also produced in Paso Robles, Santa Barbara, Temecula, and many other regions across California.
As farming practices continue to adapt to changing weather conditions and water availability, wine grapes remain an important part of California agriculture. The Barilles opened The Goods, an artisan doughnut bakery on State Street that specializes in ultra-fresh doughnuts in gourmet varieties including brown butter, chocolate ganache, Tahitian vanilla, stuffed Nutella and s’mores.

Froglanders
French CrepesFounded in 1986, Froglanders is a family-owned crêperie serving San Diego authentic sweet and savory crepes, frozen yogurt, fresh smoothies, and boba!
Froglanders started as frozen yogurt shop in La Jolla and has been there for the last 35 years. Their second location was started here in Carlsbad at the beginning of COVID, which was bad timing, but still, they did well. Primarily because they decided to start making crepes as well as yogurt. And now the crepes are their best sellers. The crepe crust is gluten free and vegan: from buckwheat and flaxseed.
How Froglanders got its name:
What happens to kids when they get frozen yogurt? They get the energy they need, and they jump around with happiness. Frogs do the same all the time. That is how the name Froglanders came to be, it is where people hop from the happiness a delicious frozen yogurt gives you.

Señor Grubby's
Señor Grubby’s started in 2008 by a group of local guys looking to put a twist on the local Mexican fair. After numerous trips to Mexico and local Mexican & American breakfast spots they noticed missing elements that they wanted to highlight.
Local sport’s bar, come and watch your favorite local team play. They also do fund raisers for teams here in Carlsbad. Before Senor Grubby’s was here it was a home, then it was Mariah’s Café which was a breakfast place in town. The mayor owns the land, he does not own Senor Grubby’s just the land. And no there is no real Senor Grubby. They serve Mexican food, today’s tasting is the Al Pastor taco, and it is a pork roast infused with pineapple and a secret spice from Mexico, topped with fresh cilantro. This place is usually busy with local fund raisers for sports teams. In fact, the owner plays on a local softball team and of course his team usually is the winner, so they are always having parties here.
Senor Grubby’s also won best burrito in San Diego the past few years. If you like the Al Pastor meat and you want it in a burrito, it is called the Carlsbad Burrito. Also, they just opened a new place in the Shoppes at Carlsbad called Grubby’s Poke Bowl, check it out.

Gelato Love prepares gelato in small batches every day, using only our authentic Italian recipes. They have installed in the heart of Carlsbad an authentic Gelato Lab.
May 2014 Cristina and Paola moved from Rome directly to Carlsbad to bring the authentic taste of the worldwide renowned Italian gelato.
Our passion and research for the most outstanding traditional gelato brought Chef Cristina to Perugia, Italy (University of Flavors), where she attended long term courses in artisanal gelato production from the most famous Italian and Sicilian gelato experts in the time.
Christina has developed over 130 different recipes using locally source fruits like the strawberries from the Strawberry Farm.
Christina returned to Italy and Paola took over business and she is a health nut. So, she made the gelato an even more healthy alternative by reducing the sugar content to 80% less sugar than ice cream. They use a plant-based sugar substitute called Allulose.
WHAT IS GELATO
Gelato contains one-half the fat and one-third fewer calories as compared to traditional ice cream. Additionally, while ice cream comprises as much as 60% air, the content of gelato measures at about half that. These differences give gelato a creamier, smoother texture and a richer, fuller flavor. Now using a plant-based sugar substitute called Allulose (80% less sugar than ice cream)
Tastings: four small tastings of different gelato for each guest.
