People often ask me how a registered nurse became the owner of a food tour company.
To me, the two careers have more in common than people might think.
For more than 30 years, I cared for people as a registered nurse, many of those years working in heart surgery. Before that, I proudly served in the U.S. Army. Throughout my career, I learned that people may not remember every detail of what you did for them, but they will always remember how you made them feel.
That lesson became the foundation of Carlsbad Food Tours.
Today, instead of caring for people in a hospital, I have the privilege of welcoming them to one of my favorite places in the world. I traded hospital hallways for the streets of Carlsbad Village, but my purpose never changed.
I still care for people.
Now I simply do it through hospitality, storytelling, and bringing people together over great food.
The Idea That Changed Everything
The inspiration for Carlsbad Food Tours came during an anniversary trip to Carmel in 2013.
My husband, Brad, and I joined a walking food tour, and it completely changed the way we experienced the town. We didn’t simply eat at wonderful restaurants—we met local business owners, learned the history behind the buildings, and discovered stories we never would have found on our own.
As we walked through Carmel that afternoon, one thought kept coming back to me:
“Carlsbad needs this.”
Carlsbad had incredible restaurants, beautiful beaches, fascinating history, and a welcoming community, yet no one was bringing all of those pieces together into one experience.
When we returned home, I knew I wanted to change that.
Learning How to Build a Dream
Starting a business was completely new to me.
I reached out to Stacy, the owner of the Carmel Food Tour, who generously shared her advice and encouraged me to learn from the best in the industry.
Brad and I traveled to Chicago to attend Food Tour Pros, where Shane Kost taught us how to build a successful food tour business—from working with restaurant partners to pricing tours and creating memorable guest experiences.
We returned home full of ideas and immediately began introducing the concept to local restaurant owners.
Those early conversations became the beginning of what is now Carlsbad Food Tours.
Choosing the Right Restaurant Partners
One of the biggest challenges was deciding which restaurants to include.
Carlsbad has so many wonderful places to eat that choosing just a handful wasn’t easy.
I developed two simple criteria.
First, the food had to be exceptional.
Second, the restaurant had to have a story worth sharing.
I’ve always believed people connect with people more than menus.
That’s why we focus on family-owned businesses, passionate chefs, and restaurant owners who pour their hearts into what they do.
Our First Tour
In May 2014, we welcomed our very first guests.
There were eight of them.
Fortunately, many were family and friends, which helped calm my nerves.
Back then, the tour featured eight tasting locations, including Caldo Pomodoro, Café Topes, Lola’s Mexican, Humble Olive Oils, Gelato Love, Vigilucci’s Gourmet Market, Señor Grubby’s, Witch Creek Winery, and Café Panini.
Our very first tasting was Caldo Pomodoro’s famous Artichoke Heart appetizer served with warm garlic bread.
It was delicious—and the perfect way to begin.
The afternoon went surprisingly smoothly.
Guests laughed together, asked questions, discovered restaurants they had never visited, and began seeing Carlsbad through new eyes.
That was the moment I realized this wasn’t simply a food tour.
It was a way to connect people with a community.
Brad’s Belief in the Dream
Every entrepreneur needs someone who believes in them.
For me, that person has always been my husband, Brad.
Before I started Carlsbad Food Tours, Brad had already built his own successful business after a long career in medical device marketing.
His experience in branding and marketing became invaluable as we launched the company.
More importantly, he gave me confidence when I wasn’t sure I could do it.
Carlsbad Food Tours has always been a family effort.
Growing With the Community
The company has grown far beyond anything I imagined.
Today, Carlsbad Food Tours is celebrating more than a decade of introducing visitors to our favorite restaurants, sharing the city’s history, and supporting locally owned businesses.
Along the way, we’ve been honored with awards, national recognition, and thousands of wonderful guests.
I’m deeply grateful for every milestone—from being named Woman-Owned Business of the Year to being recognized by Viator as one of the Top Food Tours in the United States.
But awards have never been what motivates me.
Success Isn’t Measured by Awards
The greatest reward is much simpler.
Every time I read a five-star review, I smile.
Not because of the rating.
Because it means someone left loving Carlsbad a little more than when they arrived.
That’s always been the goal.
If our guests leave with a new favorite restaurant, a deeper appreciation for our history, and memories they’ll carry home, then we’ve done exactly what we set out to do.
Why We Exist
Carlsbad Food Tours was never created simply to introduce people to great food.
It was created to introduce them to a community.
Every restaurant has a story.
Every historic building has a past.
Every mural reflects our culture.
Every chef, restaurant owner, artist, and local business helps shape the character of Carlsbad.
Food is the invitation.
Storytelling is what brings Carlsbad to life.

When people visit a new destination, it’s easy to focus on the big attractions.
The famous landmarks.

Those places are certainly worth seeing.
But I’ve learned that the true heart of a community is usually found somewhere else.
It’s in the family-owned restaurant where the owner still greets guests at the door.
It’s in the local artist who paints a mural that tells the story of the neighborhood.
It’s in the shop owner who remembers your name when you return.
It’s in the baker who arrives before sunrise because they believe every pastry should be made from scratch.
Local businesses are more than places to eat or shop.
They are where dreams become reality.
Behind every restaurant is a family that took a chance.
Behind every storefront is someone who believed in this community enough to invest their time, talent, and heart.
When we choose to support local businesses, we’re doing more than making a purchase.
We’re helping families thrive.
We’re preserving the unique character of our town.
We’re creating opportunities for future generations.
One of the greatest compliments I hear after a tour is, “I never would have found these places on my own.”
That tells me we’ve done something meaningful.
We’ve helped someone discover the real Carlsbad.
Because local isn’t just where we do business.
Local is who we are.

People think it’s about serving food.
Pouring drinks.
Taking reservations.
Showing people where to sit.
Those things matter.
But true hospitality begins long before any of that.
It begins with making someone feel welcome.
Everyone who joins one of our tours arrives carrying something we cannot see.
Some are celebrating.
Some are grieving.
Some are reconnecting with family.
Some simply need a break from everyday life.
We may never know their story.
But for the next few hours, we have an opportunity to make them feel seen.
A warm smile.
A thoughtful introduction.
Remembering someone’s name.
Helping a nervous guest feel included.
Those small moments often become the memories people treasure most.
Hospitality is kindness in action.
And kindness never goes out of style.

Cherimarie Poulos
Owner & FounderCherimarie Poulos aka Mrs. Carlsbad is the owner and founder of Carlsbad Food Tours. Born & raised in California. And has lived in San Diego over 30 years, my children were born in the area. I have a strong connection to Carlsbad, in fact one of my daughters was Miss Carlsbad 2005 (Stacy Poulos).
So, I voted herself to be Mrs. Carlsbad. Now the Chief Foodie and Founder of Carlsbad Food Tours! I love Carlsbad and is happy to share my knowledge about the local history and great eateries in the Carlsbad Village to our guests.
