What makes Cicciotti’s Trattoria a fabulous restaurant, is it chef, Gaetano Cicciotti. He is an accomplished chef, restaurateur & published author. Born in Naples, Italy he came to the United States in the late 1990’s. He opened his first location in Cardiff, Cicciotti’s Trattoria in 2002. He serves some of the best authentic Italian food in North County. In Sept 2016 he opened his second location in Carlsbad Village. Gaetano loves the village and is very happy to be providing Carlsbad with another fabulous Italian eatery. We like to call Carlsbad, “Little Italy in North County” for it’s richness of Italian restaurants and specialty shops.
Fresh & simple cooking is the Cicciotti way. Gaetano first tasted the joys of Southern Italian cooking as a child growing up in Naples, Italy. Surrounded by simple fresh ingredients. He loved the time he spent in the kitchen with his mother and grandmother. From them he learned to cherish old world traditions – nostalgic recipes where aromas and tastes transport you back to simpler times. He remembers having Baccala, one of his grandmother specialties. It is a salted cod dish that has always been one of his favorites. Another favorite family recipes was his mother’s Spaghetti alla Carbonara – a recipe that is so full of flavor and easy to make.
