The Story Behind the Dream
For Chef Gaetano Cicciotti, cooking has always been about more than preparing food.
It’s about preserving family traditions.
Born in Naples, Italy, Chef Cicciotti grew up surrounded by authentic Italian cuisine, where meals were celebrated, recipes were passed from one generation to the next, and gathering around the table was an important part of everyday life.
When he moved to Southern California in the late 1990s, he brought those traditions with him.
In 2002, he opened the original Cicciotti’s Trattoria Italiana & Seafood in Cardiff-by-the-Sea. The restaurant quickly earned a loyal following for its handmade pastas, fresh seafood, wood-fired pizzas, and welcoming atmosphere.
As Carlsbad Village continued to grow into one of North County’s premier dining destinations, Chef Cicciotti saw an opportunity to bring authentic Italian dining to the community he loved.
Today, his Carlsbad restaurant has become one of the Village’s most respected culinary destinations.
In addition to being a successful restaurateur, Chef Cicciotti is also a published cookbook author, sharing many of the traditional recipes and techniques that have inspired his restaurants.

- Pennette alla Vodka – Short pasta tossed in a creamy tomato vodka sauce with your choice of chicken, sausage, or shrimp.
- Tagliatelle Bolognese – Fresh ribbon pasta served with a slow-simmered meat sauce made with veal, pork, and beef.
- Gnocchi al Gorgonzola – Homemade potato dumplings finished with a rich gorgonzola cream sauce and walnuts.

One of my personal favorites is the Eggplant Parmigiana. It’s comforting, flavorful, and a wonderful example of how simple ingredients can create something truly memorable.
