Strawberry Shack | A Sweet Taste of Carlsbad’s Farming Heritage

a close up of a glass of orange juice

“Sometimes the sweetest stories begin with a single strawberry.”

In a town famous for its flower fields, fertile farmland, and coastal beauty, it seems only fitting that one of Carlsbad Village’s favorite dessert stops celebrates one of the community’s most beloved crops—the strawberry.

Strawberry Shack is more than a dessert shop.

It’s a celebration of Carlsbad’s agricultural roots, where fresh strawberries take center stage in delicious creations that delight visitors of all ages.

Whether you’re stopping in for a refreshing strawberry treat after a walk along Carlsbad Boulevard or ending a Carlsbad Food Tour with a sweet finale, Strawberry Shack offers a delicious reminder that Carlsbad’s farming heritage is still very much alive.

Meet the Owners

Russ and Tyler Bruhn’s Sweet Vision

Behind The Strawberry Shack are Russ Bruhn and his son, Tyler Bruhn, a father-and-son team who share a passion for celebrating Carlsbad’s agricultural heritage through unforgettable desserts.

Russ is also the founder of Carlsbad Gourmet, a company dedicated to showcasing the flavors and spirit of North County San Diego. Building on that passion, he and Tyler created The Strawberry Shack as a tribute to one of Carlsbad’s most iconic crops—the strawberry.

Their vision was simple:

Celebrate locally grown strawberries.

Create desserts that make people smile.

Support the farming families who continue Carlsbad’s rich agricultural traditions.

During strawberry season, many of the shop’s signature desserts feature fresh berries sourced from the nearby Carlsbad Strawberry Company, allowing guests to literally taste the flavors of Carlsbad.

Together, Russ and Tyler have created more than a dessert shop—they’ve created an experience that connects visitors with one of the community’s sweetest traditions.

The Restaurant Story

A Sweet Idea That Grew

The original Strawberry Shack began as a small dessert stand in Carlsbad Village, tucked near the former Witch Creek Winery.

As its popularity grew, so did the business.

The tiny stand eventually expanded into a larger permanent location in Carlsbad Village, giving guests more room to enjoy its growing menu of strawberry-inspired desserts.

The success of the concept also led to a second location in the heart of Oceanside Village, allowing even more visitors to experience one of North County’s favorite dessert destinations.

Today, both locations continue celebrating Carlsbad’s agricultural roots through fresh, colorful desserts that have become a favorite stop for locals and visitors alike.

Behind the Scenes

From Farm to Dessert

One of the things that makes Strawberry Shack special is its commitment to using fresh local strawberries whenever they’re in season.

Rather than simply serving strawberry-flavored desserts, Russ and Tyler believe the fruit itself should be the star.

By sourcing strawberries from the Carlsbad Strawberry Company, they continue a partnership with one of the region’s most respected farming families while helping preserve Carlsbad’s agricultural identity.

It’s a delicious reminder that some of the best ingredients are grown just a few miles away.

Why We Love Them

One of the reasons I love introducing guests to Strawberry Shack is that the story goes far beyond dessert.

Russ and Tyler have found a creative way to celebrate Carlsbad’s farming heritage while supporting another local business—the Carlsbad Strawberry Company.

Every shortcake, sundae, and strawberry treat reminds our guests that agriculture is still part of Carlsbad’s identity.

It’s a wonderful example of local businesses supporting one another while creating memorable experiences for everyone who visits.

Strawberry Shack

Fresh Ingredients Make the Difference

One of the reasons Strawberry Shack stands out is its commitment to freshness.

When strawberries are in season, every berry reflects the unique growing conditions that have made Carlsbad famous.

The desserts are intentionally simple, allowing the natural sweetness of the fruit to shine.

It’s proof that sometimes the best desserts don’t need complicated recipes—just outstanding ingredients.

Why We Love Them

Strawberry Shack is one of those places that always makes people smile.

Guests often arrive saying they’re “too full for dessert.”

Then they take one bite.

Suddenly, they’re asking where they can come back tomorrow.

The shortcake is light, refreshing, and perfectly captures the agricultural story we tell throughout the tour.

It’s a wonderful reminder that Carlsbad’s farming legacy isn’t something found only in history books.

You can still taste it today.

Carlsbad’s Strawberry Legacy

Carlsbad Farmer's Market

Long before Carlsbad became known for its resorts and restaurants, strawberries were one of the region’s signature crops.

Families like the Ukegawa helped preserve that tradition, continuing to grow strawberries for generations while introducing thousands of visitors to Carlsbad’s farming heritage through the Carlsbad Strawberry Company.

Strawberry Shack celebrates that same legacy by showcasing strawberries in a way that’s both delicious and memorable.

It’s another example of how Carlsbad continues to honor its agricultural past while embracing the future.

If These Tables Could Talk…

“I’ve watched children laugh over strawberry-covered smiles, grandparents share memories of farms that once stretched across Carlsbad, and visitors discover just how sweet locally inspired strawberries can be. Every dessert reminds me that some traditions are worth preserving—one delicious bite at a time.”

Cherimarie’s Reflection

One of the things I admire most about Russ and Tyler is how they’ve taken something as simple as a strawberry and turned it into a celebration of Carlsbad.

By partnering with the Carlsbad Strawberry Company, they’re helping preserve an important part of our community’s agricultural heritage while creating joyful experiences for families and visitors.

When our guests finish the tour with Strawberry Shack’s shortcake, they’re enjoying more than dessert—they’re tasting a piece of Carlsbad’s history.

That’s a sweet ending I never get tired of sharing
