Manka Peruvian Cuisine Brings the Flavors of Peru to Carlsbad

Carlsbad’s culinary scene continues to grow, and one of its most exciting recent additions is Manka Peruvian Cuisine. Opened in June 2025 in the former Pollos Maria location on Harding Street, Manka introduces an elevated yet approachable take on one of the world’s most celebrated cuisines: Peruvian food.

As the owner of Carlsbad Food Tours, I’ve watched Carlsbad evolve into a true foodie destination over the past three decades. While our city has embraced everything from Michelin-starred French dining to modern California cuisine, Manka brings something that has been largely missing from the local dining scene—a sophisticated restaurant dedicated to the rich culinary traditions of Peru.

What Does “Manka” Mean?

The name “Manka” means “vessel” in the native language of the founders. The restaurant describes itself as a place where ingredients, traditions, techniques, and hospitality come together to tell the stories of Peru through food.

The restaurant was created by restaurateur Jorge Wong, who owns successful Peruvian restaurants in Los Angeles. Leading the kitchen is Executive Chef Julio Arias, whose menu blends traditional Peruvian flavors with modern presentation and culinary techniques.

Why Peruvian Cuisine Is So Special

Peruvian cuisine is often considered one of the most diverse and exciting food cultures in the world. Peru’s culinary identity is shaped by centuries of Indigenous, Spanish, African, Chinese, Japanese, and Italian influences.

This fusion of cultures has created iconic dishes that are now enjoyed worldwide:

  • Ceviche – Peru’s national dish featuring fresh fish marinated in citrus-based “leche de tigre” (tiger’s milk)
  • Lomo Saltado – A stir-fried beef dish that reflects Chinese influence on Peruvian cooking
  • Arroz Chaufa – Peruvian-style fried rice inspired by Chinese immigrants
  • Papa a la Huancaína – Potatoes served with a creamy yellow pepper sauce
  • Anticuchos – Grilled skewers traditionally sold by street vendors
  • Pisco Sour – Peru’s famous national cocktail made with pisco, lime, egg white, and bitters

Peru is also home to thousands of varieties of potatoes, native peppers such as aji amarillo and rocoto, and unique ingredients like choclo (large-kernel Peruvian corn), quinoa, and lucuma fruit. These ingredients appear throughout Manka’s menu.

What to Order at Manka

The menu highlights many of Peru’s most beloved dishes while adding contemporary touches.

Popular dishes include:

Ceviche Clásico

Fresh mahi-mahi served with traditional tiger’s milk, choclo, sweet potato, and red onion. Many diners describe it as one of the standout dishes on the menu.

Lomo Saltado

Tenderloin sautéed with onions, tomatoes, aji amarillo peppers, soy sauce, and served with rice and potatoes. This classic dish perfectly showcases Peru’s Chinese culinary influence.

Arroz con Mariscos

A seafood rice dish featuring shrimp, calamari, mussels, and Peruvian spices. Diners consistently praise this entrée for its rich flavor and generous seafood selection.

Anticuchos de Corazón

Traditional grilled veal heart skewers served with potatoes and chimichurri, a popular Peruvian street food favorite.

Pisco Sour

No Peruvian dining experience is complete without Peru’s signature cocktail. Manka offers a classic version alongside several creative cocktail options inspired by South American flavors.

A Blend of Tradition and Innovation

One interesting aspect of Manka’s menu is its incorporation of Nikkei cuisine, a culinary style developed by Japanese immigrants in Peru. Dishes like tuna wantacos, salmon tiradito, and sushi-inspired creations highlight this unique cultural fusion that has become a hallmark of modern Peruvian cooking.

This blend of cultures is one of the reasons Peruvian cuisine continues to receive international acclaim. It offers familiar ingredients presented in unexpected and exciting ways.

A New Culinary Destination in Carlsbad

Located just minutes from Carlsbad Village, Manka features a spacious patio and an inviting atmosphere that works equally well for date nights, celebrations, or simply exploring something new. Early diners have praised the restaurant’s authentic flavors, beautiful presentation, and warm hospitality. Community feedback has been especially enthusiastic about the ceviche, seafood dishes, and traditional Peruvian specialties.

For locals and visitors alike, Manka offers an opportunity to experience one of the world’s most dynamic food cultures without leaving North County.
