Bright colors fill the display case. The aroma of fresh waffle cones drifts through the air. Behind the counter, authentic Italian gelato is crafted with the same passion and attention to detail found in neighborhood gelaterias throughout Rome.

At Gelato Love, every scoop tells a story of family, tradition, and the belief that simple ingredients, when treated with care, create something extraordinary.

It’s one of those places that immediately makes you smile—and one of my favorite stops to introduce guests to on Carlsbad Food Tours.


Meet the Owners | The Story Behind the Dream

For cousins Paola and Christina, opening Gelato Love wasn’t simply about starting a business.

It was about bringing a piece of home to Carlsbad.

Originally from Rome, Italy, they grew up surrounded by a culture where food is deeply woven into everyday life. Meals are shared with family, recipes are treasured, and quality is never compromised.

Determined to honor those traditions, Christina attended the University of Flavors (Università dei Sapori) in Italy to study the art and science of authentic gelato making.

That may sound unusual to Americans, but in Italy, food is taken seriously. Becoming a gelato artisan requires formal training in ingredients, texture, flavor development, and traditional production techniques.

Armed with that knowledge and a passion for authentic Italian flavors, the cousins brought their dream to Carlsbad Village.

Today, Gelato Love continues to share a little piece of Italy with every guest who walks through its doors.


The Restaurant Story | Bringing Italy to Carlsbad

Located in the Village Faire Shopping Center, Gelato Love quickly became known for offering something different.

This isn’t ordinary ice cream.

Authentic gelato contains less butterfat than traditional ice cream, allowing the natural flavors to shine while creating an incredibly smooth, creamy texture.

The shop itself reflects its Italian roots, from its welcoming atmosphere to the colorful display of handcrafted gelato that greets every visitor.

One look into the display case and you immediately know you’re somewhere special.


Signature Flavors

One of the things I love most about Gelato Love is that there’s always something new to try.

Christina has created more than 130 different gelato recipes, inspired by both Italian classics and seasonal California ingredients.

Some favorites include:

  • Honey Lavender
  • Pistachio
  • Stracciatella
  • Mint Chocolate Chip
  • Fresh Strawberry
  • Dark Chocolate

If I had to choose just one favorite, it would be Honey Lavender.

The first taste is rich honey with just the right amount of sweetness.

Then comes a gentle hint of lavender that lingers beautifully without overpowering the flavor.

It’s elegant, refreshing, and uniquely Carlsbad.


Behind the Scenes | Authentic Ingredients Matter

Everything at Gelato Love is made fresh.

When strawberries are in season, they proudly use fresh Carlsbad strawberries grown in local fields.

Fresh mint leaves flavor the Mint Chocolate Chip gelato.

Even Carlsbad’s famous mineral water finds its way into their recipes, creating a subtle connection between one of Carlsbad’s oldest stories and one of its sweetest traditions.

Some ingredients simply can’t be replaced.

For pistachios, hazelnuts, and specialty nuts, Paola and Christina continue importing them directly from Italy because, as they like to say,

“They simply taste better.”

Guests can even watch fresh gelato being made through the large viewing window overlooking the production kitchen, offering a behind-the-scenes look at the craftsmanship that goes into every batch.

Our guests love ending their culinary journey with authentic Italian gelato, but what they remember most is the passion behind it.

Paola and Christina didn’t simply bring gelato to Carlsbad.

They brought a family tradition.

That’s exactly the kind of story we love sharing.

I also love how they embrace Carlsbad by using local strawberries and even incorporating our famous mineral water into some of their recipes.

It’s a wonderful example of Italian craftsmanship meeting California agriculture.

Every visit reminds me that the best food tells a story.
