The Carlsbad establishment draws inspiration from Boston’s original Green Dragon Tavern, which opened in 1654 and became associated with the Sons of Liberty and the events leading toward the American Revolution.
Meet the Founders
Green Dragon was created by owner Bruce Bartlett, whose personal collection of historical documents and artifacts became the foundation of its museum.
John Lek was instrumental in developing the concept and has served as its general manager and operating leader. Together, they envisioned a place where visitors could encounter history in an approachable setting rather than behind the doors of a traditional institution.
The Carlsbad restaurant and museum opened in February 2014.
The Museum Experience
Displays explore the period from the Pilgrims through the Revolutionary War. Documents, reproductions, maps, portraits, books, and other artifacts help tell the story of the country’s founding.
Guests can visit the museum without purchasing a meal, making the collection accessible to local residents, students, families, and travelers.

Chef Darren Denny was publicly identified as Green Dragon’s executive chef in 2023. Because the restaurant’s current website does not name its culinary leader, that title should be reconfirmed directly with Green Dragon immediately before publication.
