Meet the Bakers and Owners
Clinton and Louie Prager were born and raised in Carlsbad and developed a shared passion for traditional bread.
Louie began learning the craft while attending college, apprenticing at a small bakery and operating an informal bread-delivery service. The brothers later borrowed oven space from another local business and sold their loaves at farmers markets.

Restoring an Old Tradition
The Prager brothers built their bakery around naturally leavened, hand-shaped bread.
Their philosophy emphasizes fermentation, whole grains, traditional techniques, and carefully selected ingredients. Rather than speeding up production with commercial shortcuts, the bakers allow time to develop each loaf’s flavor, texture, crust, and character.
From Bakery to Community Staple
The business expanded from bread into pastries, sandwiches, pizza, coffee, retail markets, and additional locations. Prager Brothers products also appear at farmers markets and in restaurants throughout the region.
Even as the company has grown, bread remains at the center of its identity.
