Meet the People Behind the Restaurant
Le Papagayo began in Leucadia in 2003. Restaurateur Darrin Campbell acquired it in 2015 and expanded the concept to Carlsbad in 2021, creating a larger, music-forward location with a dedicated stage and patio. Earlier coverage identified Executive Chef Michael Lina; some later dining listings have named Mario Romero. The Story Behind the Dream
The Carlsbad location blends Mediterranean inspiration with New American coastal cooking. Its menu ranges widely enough for brunch, a relaxed lunch, dinner with friends, or a full evening centered on live music. Campbell’s expansion preserved the original concept’s artistic personality while giving it room to become a major Village gathering place.
