Meet the People Behind the Restaurant

Founder Nick Nickoloff is a fourth-generation restaurateur who opened the first Nick’s in Laguna Beach in 2008. Company Executive Chef Omar Gonzalez joined in 2010 and grew from culinary manager to company-wide culinary leader, guiding tightly edited menus and consistent execution. The official Carlsbad location page currently identifies Sarah Aiesi as general manager.
