Respecting Restaurant Timing and Workflow

Purpose

This SOP explains how guides should work within a restaurant’s timing and service flow.

Our restaurant partners are operating businesses. The tour should add value without blocking staff, disturbing customers, or interfering with regular service.

Arrive at the Scheduled Time

Restaurants prepare tastings around the agreed schedule.

Guides should:

  • Monitor the tour timeline
  • Shorten optional commentary when running late
  • Alert the restaurant about a significant delay
  • Avoid arriving excessively early
  • Never assume a restaurant can accommodate an unscheduled time

Keep Service Areas Clear

Position guests away from:

  • Host stations
  • Kitchen doors
  • Server stations
  • Point-of-sale terminals
  • Takeout counters
  • Emergency exits
  • Narrow aisles
  • Areas where hot food is carried

Ask before moving tables, chairs, barriers, or reserved signs.

Allow Staff to Lead Food Service

Pause storytelling when restaurant staff are:

  • Delivering food
  • Explaining a dish
  • Taking necessary information
  • Clearing plates
  • Moving through the group
  • Addressing a safety concern

Do not speak over the restaurant representative.

Manage Guest Conversations

Guests may want to ask restaurant staff detailed questions. Encourage interest, but remain aware of the restaurant’s workload.

Say:

“That’s a wonderful question. Let’s see whether our restaurant host has time to answer it after the tasting is served.”

Do not pressure busy staff to give an unplanned presentation.

Keep the Group Moving

Give guests clear notice before departure.

Say:

“We’ll be leaving in about five minutes, so please finish your tasting and gather your belongings.”

Before leaving:

  • Confirm the bill or voucher procedure
  • Count guests
  • Check for belongings
  • Thank the staff
  • Leave the area orderly

Address Workflow Concerns Privately

If the restaurant appears overwhelmed, speak quietly with the designated contact. Do not criticize the staff in front of guests.

Contact management when restaurant conditions may seriously affect the tour.

Performance Standard

A trained guide should:

  • Respect scheduled arrival times
  • Keep service paths clear
  • Pause for restaurant staff
  • Manage guest questions tactfully
  • Avoid unauthorized changes
  • Leave promptly and professionally
